MOSH and MOAH in food: causes and prevention

Mineral oils, and more specifically MOSH (Mineral Oil Saturated Hydrocarbons) and MOAH (Mineral Oil Aromatic Hydrocarbons), are among the most discussed chemical contaminants within European food safety. Monitoring programs by national authorities and EFSA have shown for years that these substances are particularly prevalent in high-fat and dry foods. Although legal maximum levels have not yet been set for all product groups, further regulatory tightening is to be expected in the medium term. For QA managers, this means that insight into chain risks and the structural performance of analyses are crucial to ensure food safety and prevent damage to reputation.
