In-line process validation: the new standard for microbiological assurance

Process validation has been a crucial part of quality assurance in the food industry for many years. Traditionally, validations of thermal processes - such as pasteurization or heating - were largely based on scientific models. Think of parameters like P₂ at 70°C for Listeria monocytogenes, which served as a reliable reference for microbiological killing. Yet this model thinking is less and less sufficient in practice. The food industry has changed significantly in recent years: raw materials are more diverse, recipes more complex and expectations regarding food safety more stringent. In addition, microorganisms themselves evolve - they adapt to their environment, develop stress responses and behave differently depending on the composition of the product. A model established decades ago for a classic dairy matrix does not always correctly predict what happens today in a plant-based beverage or meat substitute. Therefore, there is a growing awareness that scientific assumptions must be regularly tested against the reality of the production process. In-line process validation thus becomes an essential tool to ensure microbiological assurance.

Vigilance required - Botulism outbreaks in Italy as alarm to producers

In August 2025, Italy was rocked by two serious outbreaks of botulism. In Diamante, in the Calabria region, sandwiches containing vegetables in oil were sold that were found to be contaminated with Clostridium botulinum. Two people died, including Luigi Di Sarno and Tamara D'Acunto, and more than a dozen others ended up in the hospital, some in critical condition. Shortly before, Sardinia was the scene of a similar incident that established an epidemiological link between guacamole consumption at a festival and multiple hospitalizations, including at least one death. Italian authorities intervened harshly, with recalls of the products involved, closures of vendors and large-scale inspections. Antitoxins were even airlifted in to treat patients at an early stage.

The recent STEC outbreaks in Belgian residential care centers, with dozens sick and multiple deaths, painfully demonstrate how vulnerable our food chain still is. For producers, mass caterers and care facilities, this is not a faraway show, but a stark warning: protection against Shiga-toxin-producing Escherichia coli, or STEC for short, requires a consistent approach throughout the chain, from farm to fork.

We are proud to announce that Normec Foodlab has recently received accreditation to perform STEC analysis for both screening and isolation and confirmation. This step shows that we are serious about food safety and providing reliable microbiological testing. The need for STEC testing has been made especially clear recently by an E. coli (STEC) outbreak in baby carrots in the United States. This incident demonstrates the importance of actively testing food products not only to protect consumers, but also to avoid risk to your brand.
